Eggs in a Basket
While in Kentucky, I finally had my first visit to . . . drumroll please . . . the [in]famous Cracker Barrel Restaurant. I will add that every time we told anyone in Kentucky that we had never been to the Cracker Barrel, we got one of those, "Billy, go out back and get the shotgun. These people dun need to be edumacted!" looks.
However, the down home country cooking, a waitress who only made fun of us once for calling her well done eggs "over hard", pans nailed to the wall, homemade caramel and yes, "eggs in a basket", caused the Cracker Barrel to exceed my expectations upon first walking through the doors. Let me also add that eggs in a basket are going to become a future family tradition in my household:
1) Take two pieces of sourdough bread
2) Cut a small round center out of each with a cookie cutter
3) Fill each with an egg
4) Fry the egg in the toast
5) Add appropriate sides; i.e. cheesy hash, crispy bacon, sausage, fried apples, grits, gravy, etc.
That there is some fixens' that will make even mima (meemaw) and papa (papaw) smile.
